Cranberry, white chocolate and macadamia biscotti

In the past week I have been busy baking and making all of my edible Christmas gifts to give to family and friends.

I love this time of year as I get to bake to my hearts content and gift all of my delicious goodies.

These cranberry, white chocolate and macadamia biscotti are one of my favourites.  They are so quick to make and they can be made in advance (they will last up to a month if kept in an airtight container).  I have a terrible habit of trying what I make so be sure to hide them if you want them to last until Christmas.

Ingredients: 

  • 1 cup caster sugar
  • 2 eggs
  • 2 tspn vanilla extract
  • 1 1/3 cups of plain flour (sifted)
  • 1/3 cup self raising flour (sifted)
  • 1/3 cup roughly chopped unsalted macadamias
  • 1/3 cup dried cranberries roughly chopped
  • 1/3 cup white choc baking bits

Traditional Method:

  1. Preheat oven to 180 deg celsius
  2. Lay a sheet of baking paper on a baking tray
  3. Whisk the sugar and eggs in a bowl until they are combined
  4. Stir in the flours, extract, cranberries, white chocolate and macadamia’s
  5. Once the mixture has come together, place the dough on a floured surface and knead until smooth
  6. Divide the dough in half and roll both pieces into a log approx 30cm long.  Place the logs onto the baking tray
  7. Bake the logs for 25 minutes (or until browned, be careful not to burn).  Cool for 15 minutes
  8. Reduce the oven temperature to 150 degrees celcius
  9. Cut the logs diagonally into 5mm slices using a serrated knife.  Place the slices in single layer on baking trays lined with baking paper
  10. Bake for 12 minutes on one side or until it is crisp.  Then turn to other side and bake for another 15 minutes.  Once baked cool on wire racks

Supercook – Thermomix – Thermocooker Method: 

  1. Preheat oven to 180 deg celsius

  4. Mix in the flours extract, cranberries, white chocolate and macadamia’s, Speed 4, 10 seconds.  Scrape down and if needed mix again Speed 4, 10 seconds
  5. Once the mixture has come together, place the dough on a floured surface and knead until smooth
  6. Divide the dough in half and roll both pieces into a log approx 30cm long.  Place the logs onto the baking tray
  7. Bake the logs for 25 minutes (or until browned, be careful not to burn).  Cool for 15 minutes
