Dr Seuss was such a creative and talented genius, he came up with so many amazing books and I loved the way that they all had meaning and lessons for everyone to learn.
The Grinch Who Stole Christmas was one of my all time favourite Dr Seuss books. I would always search for it in the school library, even if it was nowhere near Christmas time I would still love reading it just as much.
A few years ago I tried to introduce my kids to The Grinch when they were pre-schoolers. However they didn’t seem to have the same love for The Grinch as I had as a child. Actually they hated it and they were so terrified of him that we were forced to hide his books so that he couldn’t be seen. Watching Jim Carrey in the first Grinch movie just made it even worse and I was so disappointed that they didn’t show any excitement towards The Grinch at all.
However now that they are a little older, they have started to embrace The Grinch a little more and I am hoping that this Christmas may be the year that we all enjoy reading The Grinch Who Stole Christmas together.
This weekend at our local cinema they have the pre-screening of the new and animated The Grinch movie. So my beautiful sister has bought me and the kids tickets to go and see it with her. I have showed the kids the trailer and they have already fallen in love with the animated version of this little green rascal. So maybe finally we can all enjoy The Grinch and the real meaning behind this story that was created by one of the greatest authors of my childhood.
I have been so inspired by the little animated Grinch that I decided to have a go at creating little Grinch cupcakes. These cupcakes have been made quite simply with ingredients bought from my local supermarket. I wanted to make these cupcakes simple so that even if you are not an avid baker you will find them quite easy to make. They are actually so simple to make that with a little bit of supervision a child could nearly make this recipe independently.
- 1 x Greens Moist Vanilla cake mix (or any vanilla cake mix)
- 2 Eggs
- 150ml of full cream milk
- 60g Butter
- 12 cupcake cases
- 12 hole cupcake tin
- 60ml fullcream milk
- 120g butter (softened)
- Icing sugar mixture from cake packet
- extra 270g of sifted icing sugar
- 2-3 Drops of green food colouring (more if you prefer it darker)
- Sugar eyes (I bought mine from Coles in the baking isle)
- Chocolate writing icing in a tube (I used Dr Oetker brand from Coles)
- Round piping nozzle approx size 0.8mm
- Piping bag
- Preheat the oven to 180 degrees celcius
- Place the 12 cupcake cases into the cupcake tin
- Place the cake mix, milk, butter and eggs into a mixing bowl and mix on low with an electric mixer.
- Once the mix has combined you can increase the speed to medium and mix for approximately 2 minutes.
- Using a spoon, evenly pour the batter into the 12 cupcake cases.
- Bake for approximately 10-12 minutes (use a skewer to poke into a cupcake, if it comes out clean it is cooked. If the batter sticks to the skewer, cook for a minute or two longer).
- Once cooked take the tin out of the oven and let it stand for 5 minutes before placing the cupcakes on to a wire rack to completely cool.
- Place milk, butter, green colouring, icing mixture from the packet mix and extra icing into a clean bowl.
- Mix on low to combine, if the icing isn’t green enough add a drop of two more.
- Mix on medium speed for approximately two minutes or until icing is light and fluffy.
- Place the icing nozzle into icing bag (you may need to cut a hole at the end to push the nozzle through. The bag needs to be quite firm around the nozzle. Spoon the icing into the icing bag.
- Take your first cupcake and place it in front of you. Start at the outer edge of the cupcake and gently squeeze the piping bag to allow a smooth release of the icing.
- Continue following the outer edge of the cupcake until you reach your starting point. at the starting point move to the inside edge of the icing and continue icing the cupcake in a swirling motion until you reach the middle of the cupcake.
- Once you have reached the middle of the cupcake, raise the piping bag and nozzle in a swift motion whilst still releasing icing. This should break off the connection between the iced cupcake and the piping bag, creating the little hair at the top of the Grinch’s head.
- Place the eyes in position and then using the chocolate decorating tube draw on the eyebrows.
- Place the cupcake aside and continue with the next cupcake, working following the steps above until they are all complete.
